There is no specific MIB implemented to support ShoreTel IP phones; we have not been able to locate one (if you have one; please share).

Nevertheless, WC should still discover the IP phones (IP/MAC basic SNMP information if enabled) and their respective connections to the network infrastructure.

Is that what you were wondering about, or more specific details about the IP phone itself? If it is abou the phones themselves we would most likely need the MIB.

I contacted Shoretel and they don't have their own OID, no MIBS...

All Shoretel phones start with a certain MAC address.

Would I be able to somehow associate those MAC addresses with 'Shoretel phones'.?

In the current release, there is no way to associate device category based on a MAC address. This will be changed to include IP/MAC as well as other attributes for releases in the future.
